Fettuccini with Avocado Pesto

Ciao, my friends! I’m sure that even the most sceptical Italian granny would fall in love with this healthy and creamy pasta variation. It takes only 10 min to make and is a delicious way to have pasta and your greens and healthy fats in one go:) Only a few ingredients needed and I’m sure that you have all or most of them in your fridge.

 

Ingredients (serves 2): 

Fettuccine or any other favorite pasta (use gluten-free, if sensitive)

2 tbsp of olive oil

1 pinch of sea salt

 

For the Avocado Pesto:

1 clove of garlic, smashed

1 handful of spinach

1 pinch of sea salt

1 pinch of black pepper

1 tbsp of lemon juice

1-2 tbsp of water

 

For the sauteed veggies:

1 tbsp of coconut oil/olive oil for frying

1 clove of garlic, smashed

1 pinch of black pepper

1 pinch of sea salt

1 pinch of turmeric powder

1 pinch of smoked paprika

3-4 tomatoes, sliced

3 handfuls of spinach

 

 

Method:

  1. Cook your pasta as usual.
  2. While it is cooking, prepare the sauteed vegetables. Add the oil to a frying pan. Once it is hot, add the garlic and all the spices. Let it cook for 1-2 min. Afterwards, add the sliced tomatoes. Let them cook for 5 min, stir frequently. Then, add the spinach. It may seem a lot, but once it will wilt, you will barely notice it 🙂 Take the pan off the heat and set aside.
  3. In a blender or food processor mix all the ingredients for the avocado pesto. Make sure to taste it and add some more salt if needed.
  4. Once the pasta is ready, drain the water and add the olive oil to the pan. Afterwards, add the avocado pesto and stir it well for another 2-3 min.

Serve the pasta with the sauteed vegetables on top. I also like having some olives on the side. Enjoy!
