This is a fantastic healthy dessert for a dinner with friends or just for yourself. I love to make it when I crave something fruity but want to pimp up my fruit with a healthy version of (ice)-cream. Only a few ingredients and very easy to make.
This recipe is vegan-friendly and has no added sugar. Just goodness from the fruit 🙂
Ingredients (serves 2):
2 tbsp maple syrup/honey
1 pinch of cinnamon
For the Vanilla-Coconut Cream:
1 tin of coconut milk, only the solid part
1 tsp of vanilla extract/vanilla powder
1 tbsp maple syrup
- Preheat the oven to 180 degrees C. Put the sliced and pitted nectarines in a baking tin and pour the maple syrup over it and sprinkle some cinnamon on top. Bake for around 40 min.
- Make sure to refrigerate your can of coconut milk for a few hours, ideally overnight. Remove the solid part from the liquid. The liquid is not needed in this recipe. You can use it later in your smoothies:)
- Add the coconut milk (solid part), vanilla, maple syrup to a cooled bowl and whisk it with a mixer for a few minutes. Your cream is ready! Keep it cool in the freezer!
You can serve the nectarines either cooled down to room temperature or cold with some cream on the side. Both ways work great!
