These energy balls are an ideal pick-me-up snack at work, they travel well and are delicious! I like to keep these in my fridge but they are always gone too soon 🙂 They take just 10 min to make, so what are we waiting for?

 

Ingredients: (for approximately 15 energy balls)

1/2 cup of ground almonds

1/3 cup of ground oats

15-20 soaked dates (depends on their size)

1 tbsp of cacao powder (+ more for dusting)

1 tbsp of chia seeds (+ more for rolling the balls in)

1 tsp of ground coffee

1/2 tsp of vanilla extract

1 pinch of salt

For decoration:

cacao powder/

matcha powder/

chia seeds/

dessicated coconut/

cacao nibs

 

How-to:

  1. Soak the dates in hot water for 15 min
  2. Blend the dates in a high-speed blender or food processor
  3. Put the dates mixture into a mixing bowl and ground the oats and almonds in the blender
  4. Afterwards, mix the dates with the ground oats and almonds and all the remaining ingredients
  5. Form small balls with your hands and roll them in the mixture of your choice
  6. Put in the fridge to set for at least 30 min. You can keep them in the fridge for about a week and way much longer in the freezer:)
